Wine & Roses to relaunch as Appellation Lodi – Wine & Roses Resort and Spa

LODI, Calif.—Lodi’s Wine & Roses is undergoing a phased renovation and rebranding, with plans to reopen as Appellation Lodi – Wine & Roses Resort and Spa in late spring 2025. The operating owners, Russ and Kathryn Munson, and their investment partners have teamed with Appellation, a hospitality company co-founded by chef Charlie Palmer and former Four Seasons executive Christopher Hunsberger.

The resort will remain open throughout the renovations, which are being conducted in stages. This project marks Appellation’s first operational hotel. The company is currently developing additional properties in other California wine destinations.

The rebrand and renovations aim to integrate Appellation’s culinary-focused hospitality model with the hotel’s legacy. Planned updates include redesigned interiors, expanded culinary gardens, and a new food and beverage program led by Palmer, Appellation’s chief culinary director Thomas Bellec, and executive chef Marco Fossati.

The first completed component is the new Maison Lodi café, which opened in February in the space formerly known as Towne Corner Café & Market. Developed in collaboration with Quail & Condor Bakery, it offers French-style baked goods, rotisserie items, and market selections.

The existing Towne House Restaurant will be reintroduced as Americana House. Updates include a cheese aging cabinet, a wine decanter station, and an interactive culinary counter.

Other planned changes include: a new “Crafted at Appellation” program, offering workshops and classes with local artisans; expanded walking paths and landscaped outdoor areas; an annual food and wine event highlighting local producers, with proceeds supporting scholarships and community initiatives; and a rebranded Wine & Roses Spa with expanded wellness programming.

According to Russ Munson, the project is part of a continued effort to evolve the resort while maintaining its roots in the Lodi community. Hunsberger added that the goal is to create a locally grounded and welcoming space for visitors.
