
PASO ROBLES, Calif.—The Ava Hotel, part of the Curio Collection by Hilton, is now accepting reservations for stays beginning September 22, 2025. An earlier summer opening is possible as construction nears completion.
Located adjacent to Paso Robles’ historic town square, the 151-room property is positioned to serve both visitors and locals, with a focus on regional influence and modern design. The boutique hotel includes a mix of guest rooms and suites, as well as several food and beverage concepts and event spaces.
The Ava’s main restaurant, EMRE, will offer dinner and weekend brunch under the direction of Chef Julien Asseo, known locally for Les Petites Canailles and S’Aranella. The menu will take a Mediterranean-inspired approach with dishes prepared over a wood fire, served family-style, and featuring local ingredients. A custom-built open kitchen and grill will be central to the dining experience. The wine list will combine international selections with Central Coast options, and the bar program will include Mediterranean-style aperitifs.
A second dining venue, Pine Street Bistro, will be located off the lobby and serve a casual indoor-outdoor menu, complemented by craft cocktails and fireside seating.
The hotel will also feature the city’s first rooftop bar and pool, offering panoramic views, private cabanas, and seasonal food and drink. This rooftop area will function as a guest amenity and a community space.
Guest accommodations are designed with earthy tones, wood finishes, and vintage details, reflecting the surrounding landscape. Room types range from standard king rooms to suites and pool-level options. On the ground floor, the hotel will include retail storefronts to encourage walkability and interaction with the downtown core.
For private events, The Ava Hotel will offer more than 3,000 square feet of flexible space. Venues include the Tablas Ballroom and the Rooftop Terrace, which can accommodate weddings, corporate events, and social gatherings.
