
LAS VEGAS—Alinea, the Chicago restaurant led by chef Grant Achatz, will bring its 20th anniversary tour to Bellagio Resort & Casino in Las Vegas for a limited-time culinary residency from April 16 through May 31.
During the residency, Achatz and his team will present a special dining experience at Michael Mina, the restaurant created by celebrity chef Michael Mina. The collaboration is part of Alinea’s anniversary tour, celebrating two decades of the restaurant’s influence on modern dining.
Tickets for the dinner experience are available now.
Achatz says the stop in Las Vegas reflects the city’s longstanding reputation for innovation in hospitality and culinary experiences.
“Las Vegas has always been willing to think big and take risks,” says Achatz. “There is a real history here of chefs, operators, and teams pushing hospitality forward, not just in scale but in creativity and craft. Bellagio understands how to create experiences that feel both bold and thoughtful, and that makes the resort a meaningful place for us to share what Alinea has been building for the past twenty years.”
The residency marks the final stop on Alinea’s anniversary tour, which has previously hosted sold-out events in Beverly Hills, Calif.; Miami Beach; Big Sky, Mont.; Brooklyn, N.Y.; and Tokyo.
During the Las Vegas stop, Achatz and his team will collaborate with Bellagio chefs and local purveyors to create dishes inspired by the city’s culinary landscape while maintaining Alinea’s experimental approach to cuisine.
Achatz added, “This tour has served as a love letter to the entire restaurant and hospitality industry. We are grateful for the opportunities and relationships that have shaped us, and we have enjoyed sharing our gratitude with the broader community that continues to inspire us.”
The residency will take place inside the Michael Mina dining room at Bellagio, located near the resort’s Bellagio Conservatory & Botanical Gardens. Reservations will be available through the resort’s concierge and online booking channels.
