
MIDWAY, Utah—Appellation, the culinary-focused hotel brand co-founded by chef Charlie Palmer and hospitality executive Christopher Hunsberger, is partnering with wellness advocate Deepak Chopra to launch a new destination in Midway, Utah. Scheduled to open in 2026, AMEYALLI Park City by Appellation is described as a wellness-driven community rooted in local heritage and natural resources.
Located on a 78-acre site near a natural geothermal spring, the development will include an 80-key hotel, multiple dining venues, and a wellness center. The property will be operated and managed by Appellation and will feature a restaurant and bar by Palmer, a farm-to-table dining concept, a spa, and a luxury pool.
The site contains 28 hot springs and views of the Wasatch Mountains. Design for the resort is being led by Overland Partners, with a focus on incorporating natural materials and aligning the project with the geology and cultural history of the area. A granite dome—identified as the highest point on the land and considered historically significant—will remain a focal point of the community.
“Our name, Appellation, means ‘to give a name to a place,’ reflecting our commitment to infusing locally rooted experiences into every hotel we operate,” said Palmer, who also serves as CEO of the company. “At AMEYALLI, this will mean integrating the wellness philosophies of Deepak Chopra, while celebrating the bounty of Utah’s mountain valleys and spotlighting local purveyors of Midway and the Park City region throughout the resort’s culinary program.”
Utah developer Charles Heath initiated the project in collaboration with Chopra. The AMEYALLI Wellbeing Center will offer wellness programs based on Chopra’s “Seven Pillars of Wellbeing” and treatments inspired by ancient healing practices and new wellness technology. The center will include a hypostyle hall housing thermal pools of varying temperatures.

Appellation’s hotels emphasize local food culture and public engagement through open lobbies, hands-on culinary events, and partnerships with local producers. The AMEYALLI site will include a 55-acre geological preserve and gardens for guest education and food production.
“This partnership allows us to offer guests a new sanctuary built upon the intersection of Appellation’s elevated and personalized hospitality and the transformative wellness programs of AMEYALLI,” said Hunsberger, Appellation COO and former Four Seasons executive.
The resort will be near Midway’s village center and within driving distance of Deer Valley Ski Resort, Park City, and Salt Lake City.
