
Heritage Hotels & Resorts has announced the appointment of Sean Sinclair as the new executive chef of Level 5, the rooftop restaurant and lounge at Hotel Chaco in Albuquerque, N.M. Sinclair, a native of Tijeras, N.M., brings a decade of culinary experience and a deep connection to his home state to this new role.
A graduate of Le Cordon Bleu culinary school in Portland, Ore., Sinclair has led kitchens across the country, most recently helming the culinary teams at The Inn and Spa at Loretto in Santa Fe, N.M., and The Clyde Hotel in Albuquerque. Notably, under his leadership, Albuquerque’s Farm & Table was named the best restaurant in the city by USA Today.
“We’re excited to keep Sean in the family by bringing him over to Level 5, which has been the crown jewel of the Albuquerque dining scene since it opened in 2017,” says Adrian Perez, president of Heritage Hotels & Resorts. “I have no doubt that our community and guests will be impressed with chef’s plans for Level 5. We are beckoning in a new era for New Mexico’s culinary scene that will be unmatched, much like our rooftop views.”
Sinclair is enthusiastic about contributing to Albuquerque’s culinary scene. “I’m excited to be a part of Hotel Chaco. Albuquerque is a place that I hold near and dear to my heart,” he says. “Level 5 is always listed among the top places to eat in the city, and I don’t think this is just because of the stunning Sandia Mountain views. We have an incredible culinary and bar program, and our guests expect to be wowed. I’m excited to share the next phase of Level 5 soon.”
