
ANAHEIM, Calif.—Hilton Anaheim has appointed Prabeen Prathapan as executive chef as the hotel prepares to open Poppy’s, a new California-inspired restaurant launching this summer. The announcement comes amid a multi-phase, multimillion-dollar renovation of the property.
With nearly 20 years of experience, Prathapan brings a globally influenced and ingredient-driven approach to Hilton Anaheim’s food and beverage program. His culinary background includes roles at Montage Laguna Beach, Mandarin Oriental Las Vegas, and, most recently, Balboa Bay Resort & Club, Calif. While originally from India, he draws on modern French techniques and a commitment to balancing taste, nutrition, and story.
“Poppy’s will be a celebration of local ingredients, layered textures, and globally inspired technique,” said Prathapan. “Whether it’s a simple avocado toast or a signature wagyu filet with confit potatoes, every dish is designed to nourish, ignite, and connect.”
Poppy’s will serve an all-day menu influenced by California’s diverse culinary landscape. The new venue joins other refreshed dining concepts at the hotel, including the adjacent Poppy’s Lounge and the reimagined Saltflower Pool Bar & Grill.
In his role, Chef Prathapan will oversee the hotel’s broader food operations, including catering and banquets. He plans to expand relationships with local farmers and suppliers, with an emphasis on sustainability and wellness.

The 1,500-room Hilton Anaheim is the largest hotel in Orange County and a key hospitality destination near the Anaheim Convention Center and Disneyland Resort. The addition of Poppy’s is part of Hilton Anaheim’s effort to modernize its offerings and enhance the guest experience through updated dining, design, and service.
