Fairmont Miramar Hotel invests in composting machine

The Fairmont Miramar Hotel, located in Santa Monica, Calif., has taken a stance against food waste by investing in a cutting-edge composting machine, according to a news report by Spectrum News 1. This decision aligns with the recent enactment of California’s new SB 1383 regulation, which mandates a 75 percent reduction in organic waste to landfills by 2025.

At Fig, the hotel’s dining venue, executive chef Damon Gordon reveals the daily generation of 40-50 pounds of food waste. The hotel’s Dyrt composting machine, which is an investment costing thousands of dollars, will address this issue. The hotel will use the compost to enrich its rooftop gardens, which will open later this spring. As per the Environmental Protection Agency, food waste constitutes 24 percent of the material entering municipal landfills and is responsible for 6.1 percent of total greenhouse gas emissions in the United States.

According to the Santa Monica Daily Press, the Fairmont Miramar Hotel’s partnership with the Los Angeles-based startup Dyrt began in 2023 with the implementation of a novel food-waste-processing prototype. This collaboration has resulted in the diversion of nearly three tons of food waste from landfills every week, producing high-quality compost suitable for use as plant fertilizer.
